Easter Tiramisu Pudding Parfaits

I had never really been a fan of Tiramisu before my trip to Italy, but while I was in Rome I knew I had to sample a few Italian desserts (you know, to balance all the pasta and pizza intake). Well boy was I wrong, I clearly didn’t know what I was missing! I fell in love with this rich coffee-flavored treat and knew that I wanted to come up with my own tiramisu flavored dessert that would be perfect for the Easter season!

These Mini Egg & tiramisu pudding parfaits will make a super cute addition to your Easter table, sure to be loved by kids and adults alike. Follow along for the tutorial below.

EASTER TIRAMISU PUDDING PARFAIT RECIPE

You will need:

  • Vanilla Jell-O pudding (1- 3.4 oz Box)

  • 2 Cups milk

  • Ladyfingers

  • Mini eggs

  • Espresso

  • Small mixing bowl

  • Whisk

STEP 1: Mix together your vanilla pudding mix and 2 cups of cold milk with a whisk for 2 minutes. Then set the pudding aside to set for 5 minutes.

STEP 2: Prepare your espresso. I just used my Nespresso machine and made a single espresso with a pod. (I ended up needing to make a second one later to soak all my ladyfingers).

Break each ladyfinger in half then quickly dunk the ladyfinger into your espresso, flipping it over to cover both sides.

Place a layer of the espresso covered ladyfingers into the bottom of your parfait glass or goblet.

STEP 3: Drop in a few mini eggs on top of your ladyfingers.

STEP 4: Scoop in a layer of your vanilla pudding to cover all layers below. Be careful not to get pudding onto the sides of your glass as you drop it in if you want to get a good parfait layered view from the side.

Repeat steps 2-4 a second time so you have two layers of ladyfingers, mini eggs, and vanilla pudding.

STEP 5: Set your mini Easter parfaits in the fridge for a minimum of 30 minutes before serving to make sure the espresso really soaks through the ladyfingers. Drop a few more mini eggs on top for decoration along with half of a ladyfinger when you’re ready to serve!
